French style scrambled eggs (a la Julia Child)

We all know how dry scrambled eggs can be when they're cooked in too hot of a skillet. Fear not - Julia Child to the rescue with a painlessly easy tip to get the best tasting, moist scrambled eggs.

1. Crack to large free-range eggs into a small bowl

2. Add 1 tsp. water

3. Scramble thoroughly with fork or whisk

4. Season with salt and pepper to taste

5. Heat a non-stick skillet to hot

6. Add about 1 tsp. butter (no margarine, please!) and immediately add eggs

7. Over HIGH HEAT, use a wooden spoon to vigorously stir the eggs.

8. As soon as steam begins to rise from the pan, remove from heat and continue to beat.

9. Alternate on and off the heat while continuously and rapidly stirring the eggs until they are completely cooked.

10. Serve.
